Coconut Mango Chia Seed Pudding

Coconut Mango Chia Seed Pudding

Here's a cool and refreshing Chia Seed Pudding recipe that you can enjoy as a healthy breakfast or a delightful dessert:

Coconut Mango Chia Seed Pudding

- 1/4 cup chia seeds
- 1 cup coconut milk (or any plant-based milk of your choice)
- 1 ripe mango, diced
- 1 tablespoon honey or maple syrup (adjust to your sweetness preference)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Shredded coconut and sliced fresh mango for topping (optional)

1. In a mixing bowl, combine the chia seeds and coconut milk. Stir well to ensure the chia seeds are evenly distributed. Let it sit for about 5 minutes and stir again to prevent clumping.

2. Add the diced mango, honey (or maple syrup), vanilla extract, and a pinch of salt to the chia seed mixture. Mix everything together until well combined.

3. Cover the bowl and refrigerate for at least 2 hours or preferably overnight. This allows the chia seeds to absorb the liquid and form a pudding-like consistency.

4. Before serving, give the chia pudding a good stir. If the pudding is too thick, you can add a splash of coconut milk to achieve your desired consistency.

5. Divide the chia seed pudding into serving glasses or bowls. Top with shredded coconut and sliced fresh mango for extra flavor and presentation.

6. Enjoy your Coconut Mango Chia Seed Pudding as a nutritious and delicious treat!
